Who we are

Our restaurants were created with the intention of leading the way in what restaurants, food, and service should be all about.

For each one of our restaurants, we had a vision of creating a very different kind of place; a restaurant with spirit, enthusiasm, and dynamic energy that would match that of the cuisine from countries we love. Our restaurants are based on basic core values of success and purpose that drive our efforts to be something very unique, representing the regional cuisine of countries we’re inspired by.

What has followed since our beginning has been an exciting and joyous exploration of who we are, what we love, and what we envision sharing with the community. This exploration has led us to create restaurants that are more than just a restaurant, but an experience. This search has repeatedly led to new ways of thinking and doing for us, and for the many who are now part of our restaurant family. All of these ideas are tangible and sincere components of who we are and what we are creating.

Hospitality, passion, professionalism, exceptional attention to detail, teamwork, pride, service, and respect for diversity, are the core values that guide our efforts.

Fresh and (where possible) local ingredients, simply prepared, and shared in good company — this is one of life’s greatest pleasures.

Chef Ross Morris has been cooking professionally for half a century. Morris is a Certified Executive Chef (CEC) and a Certified Pastry Chef (CEPC) by the American Culinary Federation.
Ryan Twigg

Chef Twigg is the Director of Operations & head chef for Café Bruges. Ryan has been in the hospitality business for over 27 years. He is actively involved with the downtown Carlisle community.
Laura Portillo

Laura Portillo

Co-Owner/ Business Manager
Laura Portillo is the organization's HR Director and accountant. She joined this restaurant family in 2012. Laura is very involved in the Carlisle non-profit community by serving in several local Boards.
Helena Twigg

Helena Twigg

Co-Owner/ Baker
Helena Twigg is the Director of Operations and founding baker for Helena's Café. She is the inspiration behind the Café. Helena has been in the hospitality business for 26 years.
